Jerk Soup Marinade

The Jerk Soup Marinade is not a dry rub like the seasoning. Its main purpose is to marinate the meat used in meat based soup recipes.

1 medium onion, finely chopped
½ cup scallions, finely chopped
2 scotch bonnet peppers, finely diced
3 tablespoons soy sauce
1 tablespoon oil
1 tablespoon cider or white vinegar
2 teaspoons fresh thyme leaves
2 teaspoons sugar
1 teaspoon salt
1 teaspoon Jamaican Pimento (Allspice), ground
1 teaspoon black pepper, ground
½ teaspoon nutmeg, ground
½ teaspoon cinnamon, ground

Place all the ingredients into a blender and blend until it becomes smooth. Store in airtight containers in your refrigerator. This can serve up to one month. When you are ready to use the marinade in meat based soups you are required to place the meat in the marinade and let it marinate OVERNIGHT. This will ensure that the jerk taste resonates with every sip of the soup.
