Jerk Soup Seasoning

You can use this recipe in vegetable based soup recipes, including stocks and chowders. It can also be used to season meat, but is not as potent unless it is used along with a jerk marinade.

5 Allspice or Pimento berries crushed
2 scotch bonnet peppers diced
¼ teaspoon cinnamon powder
½ teaspoon brown sugar
¼ teaspoon onion powder
¼ teaspoon nutmeg grated
½ teaspoon crushed cloves
½ teaspoon garlic powder
¼ teaspoon salt
½ teaspoons dried thyme leaves
¼ teaspoon black pepper

Place all the ingredients into a very large bowl. Mix all ingredients together until they are well blended. Store in airtight containers. When you are ready to use the seasoning in the soup mixtures use sparsely and depending on how many servings you require. This recipe can serve for a soup pot that serves four (4). Depending on the love for pepper you can adjust the overall taste of the scotch bonnet peppers. Though green onions are not added to the seasoning they must be present when preparing the soup.
